Beto’s Chocolate chips cookies
This is a Chocolate chip and nuts cookie recipe. This is a special recipe because it means a lot to me, as this was the second recipe that I learned and experiment with the most.
The first time that I made these cookies, according to everyone that tried them tasted amazing and later on, I started mixing the quantities and changing some ingredients to know if I could come up with better cookies. You won’t imagine how many failures do I had and how many times that I felt that my family and friends had to eat rocks and disgusting things before I settle with one final recipe, that was created by the experience of making many many cookies.
As I wrote last week, consistency is key to success.
Even though this recipe originally has nuts, I’m experimenting a bit with cocoa powder and chocolate curls instead of nuts and regular chocolate chips. The two reasons behind my decision is that deep inside me I’m still trying to find the perfection of this recipe. I want to know how far can I push this and the other and most important reason is that I’ll bake them at home and since I live with my sister who has a nut allergy(read my first blog post), I don’t want to risk a cross-contamination in our kitchen and like you all know “safety is sexy”😂.
Now let’s go to business. Let’s talk about the ingredients.
Like in all my recipes, there are two ways to do this, with the exact measurement of the recipes or my way. I personally prefer to use my instinct and to go with my gut.
I’ll give you both and you can choose the one you want to do.
This is an easy recipe to do. You can make approximately 20 medium size cookies. It all depends on how big or small you make them.
Approximate time of the whole process it’s around 30 minutes.
INGREDIENTS

1_750 gr of all-purpose flour
2_ 250 gr of sugar
3_200 gr of room temperature butter
4_ 1 teaspoon of baking powder
5_2 teaspoon vanilla essence
6_ 2 eggs
7_250 gr of chocolate chips (never use ice cream sprinkles, it will make the cookie very hard to chew)
8_250 gr of walnuts (I’ve tried using almonds or peanuts, you can use almonds but not peanuts, it doesn’t go well in this recipe)
MY WAY
1_250 gr = One cup in all my recipes, a regular mug(pic below)
2_3 cups of all-purpose flour
3_ 1 Cup of sugar
4_200 gr of room temperate butter(less than half of a 454g butter bar)
5_ 1 teaspoon of baking powder
6_a splash of vanilla essence
7_ 2 eggs
8_*1 cup of chocolate chips (never use ice cream sprinkles, it will make the cookie very hard to chew)
9*_If yo try to do the cocoa and chocolate chip one you’ll need 4 eggs and some milk that you’ll pour little by little(half of a cup) and the cocoa powder is also half of a cup 🙂
9_*1 cup of crushed walnuts (I’ve tried using almonds or peanuts, you can use almonds but not peanuts, it doesn’t go well in this recipe)
*I replaced the nuts and the chocolate chips for cocoa powder and chocolate curls
In the picture are 2 cups and a 341 ml can so you can see the sizes, doesn’t matter which one you pick, just stay with one size, you have to be consistent :).
Procedure
1_ You take all the solids and mix them together in a bowl with a wooden spoon until you see they are evenly incorporated. By solids, I mean: The flour, the sugar, the baking powder and in my case the cocoa powder, leave the nuts and the chocolate chips for later on.
2_ Add the butter and merge it with all the solid. This time use your hands, “yes, you are going to get messy”.
3_ Add the eggs and mix them with your hands. I recommend you add them one by one.
4_ Add the vanilla essence and combine it with the dough/ cookie batter.
5_ When you have an even dough you can add the chocolate chips and the nuts and mix them until they become one with the cookie batter.
5_ Butter a baking sheet and start preheating your oven at 180ºC or 360ºF.
6_ Take some cookie dough in your hand and turn it into a little ball and then gently smash it into a flat circle (like a cookie), then place it in the baking sheet.
7_ Repeat until you don’t have any cookie dough left.
8_ Place the baking sheet with the cookies inside the now warm oven carefully and leave them baking for 12-15 minutes (until they turn brownish).
9_ You can take a toothpick and stick it into a cookie and if it comes out a bit wet, It means that the dough needs some more baking. On the other hand, if it is dry it means that it is ready.
10_ When ready take them from the oven and let them rest at least 10 minutes before you try them.
11_ You can now share the cookies with your loved ones or eat them by yourself.
This is a very easy recipe to do. Instead of making little cookie balls and then smash them, you can use different cookie moulds. Use your creativity. I usually use my hands because I feel a more personal connection with the cookie dough. I usually make cookies for special occasions or as a gift for someone. I rarely bake cookies for myself, even though I’m addicted to this recipe, as they are my favourite cookies :).
